Alcohol content : 14.5 % vol.
Vinification : After complete destemming, the fermentation period lasts 5 weeks.
Ageing : Cuves inox et demi-muids pendant 18 mois.
Ageing potential : 10 years
Tasting : Expressive and intense nose, it reveals aromas of ripe black fruits (blackcurrant,
blackberry), subtle notes of sweet spices, garrigue and a slightly peppery
touch. The attack is ample and generous, beautiful fruity richness and an
already silky tannic structure. We find notes of licorice and thyme and a hint of
cocoa on the finish. Perfect to accompany grilled meats, lamb with Provençal
herbs or a platter of mature cheeses.
Food and wine pairing : Rossini beef fillet – Veal tournedos with morels – 24-month Comté cheese – Bitter chocolate ganache and tonka bean pieces.
Serving temperature : To appreciate all its nuances, it is recommended to serve it at a temperature between 16-18°C.
