Vinification : After complete destemming, the fermentation period lasts 5 weeks.
Ageing : Demi-muids for 24 months.
Ageing potential : 10 ans.
Tasting : Dark garnet color. The nose reveals a certain power, expressing a complex palette of aromas. Notes of sun-drenched red fruits emerge expressively. The mouth is generous with flavors that attack the taste buds with intensity. The elegant tannins weave a framework which brings both structure and texture to the whole. The subtle mark of the wood gives additional depth to the flavors. In short, this vintage embodies an enchanting fusion between strength and delicacy.
Food and wine pairing : Grilled aged beef rib, Kampot pepper sauce – Venison stew with red wine and cranberries – Truffled Brie – Dark chocolate fondant with a melting center.
