Vinification : After total destemming, the fermentation period lasts 5 weeks.
Ageing : Stainless steel tank
Ageing potential : 5 years
Tasting : Pretty shiny purple dress. The bouquet is very expressive. It gives off aromas of blackcurrant jam, blackberries and cherries. On the palate, the wine is dense, rich and opulent, with a light sweetness that envelops the palate. The tannins are silky, smooth and melted, adding to the harmony of the tasting. The finish is generous and persistent. This wine goes perfectly with red and white meats, such as roast rabbit with thyme or duck with olives.
Food and wine pairing : Roasted duck breast with honey and sweet spices – Rack of lamb in a Provençal herb crust – Tomme de Savoie – Chocolate and red fruit tart.
